A snack bar can look blood sugar friendly on paper. High protein, low sugar, plenty of fiber. But what actually happens after you eat it?
That's a question a nutrition label can't fully answer. Two people can eat the same bar and have completely different glucose responses based on their metabolism, sleep, stress, activity level, and what else they ate that day. The only way to know what's really happening is to measure it.
That's exactly what Signos and IQBAR set out to do.
Signos conducted this exploratory glucose-response analysis in partnership with IQBAR. Both companies collaborated on the publication of these findings.
Why We Put IQBAR to the Test
The snack bar aisle is full of bars marketed as “healthy,” “high protein,” “low sugar,” and “low glycemic.” Those claims don't always tell the same story once you look past the front of the package.
Some bars are high in protein but low in fiber. Some use natural sweeteners like honey, maple syrup, or date sugar that still contribute meaningful carbohydrates. Some have recognizable ingredients but a sugar load that rivals a candy bar. And very few have ever been tested against real glucose data.
We build IQBAR differently. Each bar has 12g of plant protein, 8 to 10g of prebiotic fiber, 1g of total sugar, and zero added sugar. The carbohydrates come primarily from nuts, fiber, and minimally processed plant ingredients rather than refined starches or syrups.
We think that profile should hold up outside of a nutrition label — so we asked Signos, a continuous glucose monitoring company, to put two of our most popular flavors through a real-world CGM analysis and measure what actually happened to glucose.
How the Test Worked
Participants wore a continuous glucose monitor (CGM) and consumed either the Peanut Butter Chip or Chocolate Sea Salt IQBAR. CGM readings were used to establish baseline glucose before eating and track the post-meal response.
For each test, the analysis measured:
- Peak glucose: the highest reading after eating
- Baseline delta: the maximum increase above their baseline glucose
- Minutes to peak: how long it took glucose to reach its highest point
- Minutes to return to baseline: how long until glucose came back down
- iAUC (incremental area under the curve): a measure that captures both how high glucose rose above baseline and how long it stayed elevated. Think of it as a measure of the total glucose load over time, not just the peak.
The dataset included 10 Peanut Butter Chip tests and 8 Chocolate Sea Salt tests. Three outliers were identified, potentially attributable to confounding factors like exercise, poor sleep, or medications including GLP-1 agonists and steroids. Because there wasn't enough information to justify removing them, they remained in the analysis.
What the Data Showed
Across all 18 meal tests, the average maximum glucose increase above baseline was 4.83 mg/dL.
To put that in context: a rise of 4.83 mg/dL is a very modest response. For reference, a bowl of oatmeal or a piece of white bread can easily produce a spike of 30 to 50 mg/dL or more in many people. The average post-meal peak across all tests was approximately 105 mg/dL, which falls within a range most metabolic health experts would consider unremarkable.
Most tests showed minimal glucose movement above baseline. A smaller number produced larger or longer-lasting responses, which is exactly the kind of individual variability a CGM is designed to reveal.

Chocolate Sea Salt produced the lower average glucose response across both measures. The Peanut Butter Chip group also contained two of the three identified outliers, which influenced its averages meaningfully.
One important caveat: the sample was small, and no inferential statistical testing was performed. Chocolate Sea Salt had a numerically lower response in this dataset, but the analysis wasn't large enough to declare one flavor definitively better for everyone.
Why Responses Still Varied
The food itself is only one variable in a glucose response. Even within the same bar, the same flavor, the same serving size, responses differed.
That's because glucose is also shaped by:
- What you ate earlier in the day
- Sleep quality the night before
- Exercise before or after eating
- Stress levels and cortisol
- Where your baseline glucose was when you started
- Time of day
- Medications and individual physiology
Three of the 18 tests produced notably higher iAUC values, likely tied to one or more of these factors rather than the bar itself. This is one of the most important things CGM data reveals: context changes the response. A food that sits quietly in your bloodstream one afternoon may land differently after a poor night of sleep or a stressful morning.
What to Look for in a Blood-Sugar-Friendly Snack Bar
The IQBAR experiment points to a few characteristics worth prioritizing when evaluating any snack bar or protein forward snack.
Where the carbohydrates come from. Bars that get their carbohydrates from nuts, seeds, fiber, and minimally processed plant ingredients behave differently in the body than bars built around refined starches or syrups.
Total carbohydrates, not just sugar. “No added sugar” doesn't always mean low carbohydrate. Dates, honey, brown rice syrup, and fruit concentrates are natural but still contribute meaningful carbohydrates. Check the full label: total carbohydrates, fiber, total sugar, added sugar, serving size, and the primary carbohydrate ingredients.
Protein and fiber together. Protein supports fullness and can help moderate the post-meal glucose response, even in bars with limited fiber. Fiber adds an additional buffer, slowing digestion and reducing how quickly carbohydrates are absorbed. Having both is worth looking for, though a well formulated high-protein bar can still produce a modest response without significant fiber.
Digestive tolerance. High-fiber bars and those containing sugar alcohols, chicory root, or inulin work well for many people and cause discomfort for others. The nutritionally strongest bar on paper isn't useful if it doesn't agree with your digestion.
No label can guarantee a flat glucose response. But the combination of meaningful protein, substantial fiber, and limited added sugar is a reasonable starting point.
What This Analysis Can and Can't Show
The findings suggest IQBAR produced a very modest glucose increase across the included meal tests, which is consistent with what its nutritional profile would predict.
What this analysis does not prove: that every person will respond the same way, that IQBAR never raises blood sugar, that one flavor is definitively better, or that IQBAR performs better than a bar that wasn't tested.
It was an exploratory analysis with a small sample. We'd like to see it repeated with more participants and alongside familiar breakfast foods and conventional snack bars, which would give a far more useful benchmark.
So, Does IQBAR Spike Blood Sugar?
In this analysis, IQBAR did not produce a large average glucose increase. Across 18 meal tests, the average maximum rise was 4.83 mg/dL above baseline, with most tests showing minimal movement. Individual responses varied, as they always do.
IQBAR's combination of plant protein, prebiotic fiber, and very little sugar may help explain that modest average. But the honest takeaway is the one a CGM always delivers: an average is a starting point, and your own response is the one that matters.
